Recipe: Roasted Chickpeas

by Di on April 5, 2010

I stumbled upon this recipe while trying to figure out what to do with the chickpeas I had soaked over night. I loved it so much, I thought I would share.

4/5/10 I tweaked the recipe recently and instead of the recipe below, I coated the chickpeas with a tablespoon of Teriyaki with Sesame and OMG they were even better then the original recipe.  Get creative and start adding your own flavors, I bet barbecue sauce would be awesome too!

017 Recipe: Roasted Chickpeas

Roasted Chickpeas

  • 1 can or 2 cups of soaked & boiled chickpeas
  • Garlic Powder
  • Grated Parmesan
  • Olive Oil
  • Seasonings – Your choice
  • Preheat oven to 425 degrees. Drain chickpeas and lay out on a cutting board to dry some. Add olive oil to coat, then sprinkle in garlic powder and any other seasonings you like. I used dried Italian seasonings and sprinkled Parmesan to coat.

Place on baking sheet and roast for 30 to 40 minute’s. Keep checking to make sure they don’t burn. They should be golden brown and have a crunch when you bite into them.

They are nice high protein snack and sort of taste like a nut.  Enjoy!

Hi! I tried this recipe today – I was not careful enough and they are a little over done – but they are still really good – I am going to give it another try. I am so glad that people were visiting your site – I actually got the link to this recipe from a girl at the #gno (girls night out) twitter party a few weeks ago.

Thanks again for the great recipe and for stopping by my blog today! :)

That was me at the #gno party, LOL :) I knew I gave it out to a few people that night.

Yeah, you do need to watch them closely, I time them every 15 min’s and roll them around so they don’t burn.

I’m glad you tried them, they are my new addiction :)
